I made this for dinner with some most excellent friends recently. I was inspired by a Nigella recipe from her Kitchen book but tweaked it a bit, omitting the sugar from the fruit and using a lighter crumble mix.
500g strawberries washed and hulled
25g ground almonds
4 tsps vanilla essence
For the crumble:
100g plain flour
75g low fat spread
75g rolled oats
75g demerara sugar
100g flaked almonds
Method:
- Pop strawberries in base of heavy ovenproof dish (preferably one you’d like to serve at table!)
- Sprinkle with ground almonds and vanilla essence
- Rub in flour and low fat spread lightly with fingers (or in a mixer if you prefer) until it resembles breadcrumbs
- Add other crumble ingredients and mix all together
- Spread crumble on top of fruit and press down lightly
- Bake in a preheated oven (Gas 6, Fan 180C, Conventional 200C) for 20-25 mins until golden brown on top
- Serve warm with fresh cream (creme fraiche or low fat yoghurt make a yummy and healthy alternative) or custard
- Bake in a hot oven (180 degrees C, fan/200 conventional) for 20-25mins until it looks like this.
